Your sister is getting to be a good baker. She nakes those deli so pretty and it looked so delicious. You can also make siopao, steamed buns with meat or vegetables fillings since your sister seemed to make those dough perfectly good for any dish she makes.

Merry Christmas to your entire family! Your mom can also add sliced hard boiled eggs to her chicken macaroni salad. Olga is already an expert in making pandecoco. For variation to the filling she can also put adobo flakes inside or pork asado. Just in case you want to try new flavors. Your mom can also make salted eggs. It takes days to prepare with lots of salt and water which is called brine solution. The sliced salted egg can be put on top of the bibingka. We also eat it for breakfast with sliced fresh tomatoes and steamed rice. You can find tutorials in youtube how to make salted eggs. I think to have oily salted eggs you have to follow the exact length of time to boil the eggs. Usually fresh duck eggs are used to soak in the brine solution to make salted eggs. I hope your family gets to try more filipino dishes. Your mom can add coconut milk to many Filipino dishes. Try to include ginger to the dish when cooking with coconut milk for viands and also chicken tinola.

You don't have to put "salted" eggs on top of the Bibingka - it is optional. I make my Bibingka without "salted" eggs. The "cheese" is good enough to give the Bibibgka the "salty" flavor that the "salty" egg is used for. I'm Filipina living in the U.S (40 years now). To make the grilled chicken a little moist, you need to spread it outside a mama sitas oyster sauce,mixed with lemon, garlic, ground black pepper, catsup, little sugar and cooking oil and mix it then spread it to the chicken or pork while grilling.

I make vegetarian macaroni salad …I use pineapple chunks in a can, diced apples, raisins, sweet relish, chopped, red onions, thyme and mayonnaise. My mayonnaise is vegan made from avocado.

In the Phil, aside from salted egg, they also add quesong puti, it’s white carabao cheese. May be the closest substitute would be feta cheese but make sure it is not too salty. You might want to try baked siopao, use the same bun recipe like the coconut bun.

👉🏼✅Just so u know...Most Filipinos don’t use mama sitas, and still with better tasting result. We simply marinade chicken or pork for several hours or overnight with citrus (like lemon, lime, or pineapple juice), soda (like 7up or lemon lime), soy sauce, garlic, sugar, catsup, salt&pepper. Make the marinade to the level of the meat. Save some marinade with added oil, and chicken spice for basting. May sprinkle more spices right after cooking also .

There is goodness everywhere. We don't need wars.

For me I add a little condensed milk for some sweetness only to the macaroni salad to complement the savory salad .. yes with raisins and pineapple chunks and tidbits would already add some sweetness to it so for others condensed milk is optional only .. enjoy
