Hi, from the Philippines and a follower of your vlog…and a grandma who loves to cook. Like the other comments, try sautéing first garlic , ginger, and onions then add the chicken. Only when the chicken turns brownish will you add your other ingredients like vinegar, soy sauce etc. The ginger is one important ingredient to improve the aroma. This is just a suggestion. Personally, I add peeled boiled eggs, preferably quail eggs once the adobo is almost done. Thank you again for loving and introducing Filipino food. My prayers for your successful endeavour. Your version of adobo is NOT Filipino adobo, but rather a Filipino-inspired Russian adobo. Real Filipino adobo DO NOT have potatoes at all, but since you add potatoes because Russians love potatoes, then it's the Russian version of the Filipino Adobo.

My way on how to prepare adobo i wl marnate 1st then i wl boil together wd d marination i will wait d oil to come out then i wl add onion after a few mnt.i wl turn off d fire. Thats my way on how to prepare my adobo.i hope sir andrei u wl read my comment.thank you po❤
Ang original talagA sa pagloloto ng adobo ay pork meat ang ginagamit hindi manok tayong mga pinoy lang ang nagbago sa recipe nito dahil mi nakilala akong spanish pamily pag nag aadobo sila ng manok hinahaluan nila ito ng pork meat at uunahin mo ang pork meat pakuluan mo muna hanggang sa lumabas ang kanyang mantika bago mo isama ang manok sa pag fry hanggang sa pumula at hanguin mo ang karne at saka mo e sauted ang union at garlic din saka mo isunod ang karne with paminta suka soy souces lagyan ng konting tubig at konting asukal lutuin mo ito hanggang sa mawala na ang sabaw.
