let's clear some of your doubts : 1. the golden/yellow sprinkles that was put on top of every dish is popularly called as Sev. It is an Indian snack food consisting of small pieces of crunchy noodles made from chickpea flour paste, which are seasoned with turmeric, cayenne, and ajwain before being deep-fried in oil. Basically it adds crunch to the food and is also eaten as a snack in most of north indian states. 2. The green chilly/pepper thing : Usually the pepper provided is not that spicy. (as most of the seeds are removed before and during the frying process). if you are 'lucky' enough you get the most spiciest one. And yes, we eat a lot of pepper (to add the hot level in food and also for the taste, purposely adding to fight the heat from summer and to provide the kick in every bite) 3. The Mayonnaise : indian Mayonnaise is different as the recipe doesnot include egg at all. That make the taste a lot differ. Also in street they keep it less thick and creamy as they have to use it in bulk and this reduces their input cost. 4. Taste and Serving size : Yes Indian Street food is much much more better in terms of taste and serving size compared to that in restaurant. The serving size might seems big as majority of street food (and all of them shown in the video) are vegetarian and are light to belly. (not soft as it has more amount of spices and flavour profile than the meal) And yes, if it (Amd it does)) taste better, people or anyone will want a large portion. Hope I have answered most of the doubts.

I am currently living in Arkhangelsk here shorma cost 160 for malinki(small) to 220 for balsoe(big) rubel and in Mascow cost 240 rub for small one. Moscow is super expensive. As per my thinking, if you eat same shorma in Indian Capital (new delhi) will cost around 100 to 120 indian rupees.

12:00 If you ask a street vendor to decrease the amount of spices he can and he will actually do it. Basically he will not give you any chilies and he will not put the mint chutney (mint souce). Without both of these things most of the food is normal for any person in the world. (For hardcore oiley dishes we don't use any chili or sauce. So if you ask the vendor to decrease the spice level he will give a you a little bit butter on the top of the dish)👍 The Customer Service is top notch but the hygiene is not 😂
