This is not the Viennese version of the sacher torte, but the version that @danielerossichef and his uncle have prepared together... and it's simply delicious 🥰
INGREDIENTS
125 g flour 0
25 g potato starch
30 g bitter cocoa
5 whole eggs
125 ml sugar
335 g apricot jam
250 ml fresh cream
175 g dark chocolate 70%
50 g dark chocolate tail
125 ml water
Orange flavoring to taste
METHOD
Pour the eggs in a planetary mixer, mix for 1 minute at maximum speed. Add the sugar until you get a whipped mixture. Pour the previously sifted powders, mixing gently from the bottom up. Butter the mold and pour the mixture up to 3/4. Bake at 355°F (180°C) for 30 mins, static mode.
For the syrup, combine the sugar and water and bring to the boil. Once cold, add the orange flavoring. For the coating, bring the cream to the boil and then add the dark chocolate. We mix well. The mixture will be ready to pour at 104°F (40°C).
Once cold, divide the cake in two, wet it with the syrup, stuff it and cover it with the jam. Finally you can glaze it and decorate it. Before eating it, let it rest for 1/2h in the fridge.
