Without a doubt, this road-side dessert is a must have when visiting Southern Vietnam.
It’s playfully known by locals as ‘Cow Cake’ as BO means beef in Vietnamese. But don’t worry, there is no cow parts, or even cow milk used to make it.
This stuff has a truly unique texture being kind of sticky, airy and spongey. And the taste is unusual as well as it is fermented and kind of sweet/sour.
I’m not sure who first did it, but whoever decided to combine these two treats was a genius! Apart, they a great, but together they become something on an entirely different level!
