Salt Fish with Minced Ground Pork is basically a meatloaf. But on steroids powered by yummy salt fish. This is a classic Chinese comfort food favorite of all ages. It’s made in virtually all Chinese households so it’s not really found in restaurants, particularly in the USA. So if you’re looking for a fan of home cooked Cantonese food this one is a must try!

►Ingredients:
400g (14oz) Ground Pork
25g (1oz) Salted Fish Makeral
60g (2oz) Water Chestnuts Diced
2inch Piece of Ginger Julienned
2 Teaspoons Spring Onion Chopped
2 Tablespoons Cornflour (a.k.a. cornstarch)
2 Tablespoon Light Soy Sauce
1 Tablespoon Oyster Sauce
1 Teaspoon Pure Sesame Oil
2 Teaspoons Sugar
1/2 Teaspoon Ground White Pepper

Water chestnut is 'ma tai', "ma" as in horse, which is crunchy and crispy. 'Ci gu' or 'see goo' is Chinese arrowhead which is starchy like taro or potato. I happened to be googling Chinese arrowhead yesterday because that's what my mom used to cook for Chinese New Year. I like some chopped shiitake mushroom or Chinese sausage in the pork patty sometimes.

@@WallyCooksEverything Hi Wally. I'm good. How are you? Do you use air conditioners in Thailand? We are expecting a snowstorm in NY/NJ, a bomb cyclone. I actually forgot the Cantonese/Taisanese name for Chinese arrowhead. You reminded me. So, thanks. :-) I was watching Tim Lee review a Chinese New Year dinner in Vancouver. He referred to black moss(fat choy) as hairy fungus. I was trying to remember what my mother cooked with black moss and I thought it was Chinese arrowhead (see goo).

@@jungdonna Spot on.... Ma Tai (Water Chestnuts) and Arrowhead (Chi Goo). My mother cooked a vegetarian dish during CNY with an combination of "Hairy Moss (Fat Choy) with shitake mushrooms (Heong Gu) , dried oysters (Hoe Si), bean curd sticks (Foo Juk), Wood ear (Mook Yee), Snow peas (Holland Dao) and a mix of other vegetarian delights to celebrate the opening of the first meal of the CNY. A vegetarian Jai dish....memories.

@@jungdonna yes I do use AC here especially at night for sleeping 😀 The days are unusually warm for January. You only know it's cold in Thailand when locals wear jackets 😆 One thing I don't miss about NYC is the snow. Looks pretty at first though I have to admit. Can't tell you how many times I've slipped and fell on my butt. Then return home with my jeans soaked wet 😀😆😂 Since moving here I have never seen snow for close to 15 years now.

Thanks Eddie. My mother served the vegetarian version that did not have Chinese arrowhead for breakfast. She served a version that contains Chinese arrowhead with the dinner. Wally, can you cook the vegetarian Jai dish, Buddha's Delight (lo han jai), with or without the dried oyster, your family's style?

😋 I have my grandmother’s clay pot and will try your method of cooking the pork and rice together. The rice must be delicious! To date, I’ve only steamed the pork on its own.

Fresh jicama is a good substitute for water chestnut (ma tai). I would never use canned which has a tin aftertaste.

Some chefs blanch the canned water chestnut or bamboo shoot before using them.

A request... would you please cook a whole chicken .. I wish I could remember the name of the dish.. but it was cooked w all kinds of medicinal herbs and roots and they ate it with rice, which is my favorite thing of all ☝️ but then they dipped each bite into some kind of seasoning like salt and pepper.. or chilli oil of some kind.. IDK. But it really sound wonderful to a downed Grandma right now... If you don't know what I'm talking about it is nooo problem.. cause I can't remember myself. Boiled chicken w rice and herbs just sounds soo good to me right now. I 😉🤞👌😋👍 Thanks for sharing your recipies . Have a blessed day.
