Salted Caramel Cracker Bites - you can’t eat just one!  

Instead of pouring the caramel over the crackers, I stir them into the caramel and then pour them out on the parchment. That way, everything is coated and I don’t have to stir it on a cookie sheet. I have lost many to the dogs doing that. Lol

I'm in Canada and couldn't find anything called "oyster/soup" crackers but I did find some little tiny kids cookies that were about the same shape. They were sugar cinnamon flavoured so I figured they would work. They did but I'm not allowed to make them anymore, we almost made ourselves sick eating all of them! They were that good.

I make this but I put the crackers in a large bowl then cover with the caramel stir and the spread on my cookie sheet. Much easier

She may do it this way because the oyster crackers are pretty fragile, but I’m sure if you’re careful putting them in the Carmel and stirring should work fine.

I use a similar recipe but at the end I remove from heat and add in about a teaspoon of baking soda and a tsp of vanilla. The baking soda increases the volume. Then I quickly pour it over about ten cups of popped pop corn. If you want more coverage use less popcorn. Then I bake it at 200 degrees for an hour stirring every 15 minutes. If you bake at a higher temp, decrease the time. It is absolutely the best caramel popcorn. I’m sure your crackers are great too. Never tried it that way. You may need a few cookie sheets for all that popcorn. It does keep in jars for quite a while if there’s any leftovers. But with all that butter and brown sugar i doubt there’s be any leftover, lol.

This is my basic caramel recipe when I make caramel corn so I know it's good. I never tried it with oyster crackers but I will now. :o)
