salted chocolate chip cookie recipe:
285g (1 1/4C) butter, softened
230g (1 1/8C) granulated white sugar
285g (1 1/3C packed) brown sugar

2 large whole eggs
1 tablespoon vanilla extract

200g (1 2/3C) low gluten or all purpose flour
285g (2 2/3C) pastry flour
1 1/2 teaspoon baking powder
1 1/4 teaspoon baking soda
1 1/2 teaspoon salt
600g (3 1/2C) chocolate chips
Preheat oven to 325F (163C) with racks spaced evenly
Cream butter and both sugars together, do not overmix. Add eggs and vanilla, mix until incorporated.
Sift both flours, baking powder, baking soda, and salt, add to sugar mixture, keeping short.
Add chocolate chips, mixing just until incorporated.
Portion as desired, suggested 75g (about jumbo egg size) on parchment paper lined baking sheets, spaced well, bake for 12-15 minutes, or until desired level of doneness, rotating pans halfway through.
Cool on wire rack.
