San Tung Chicken Wings Recipe (Crispy Sweet and Spicy Wings)

Hi Everyone!
Here's my recipe for San Francisco's San Tung Chinese Restaurant's famous fried chicken wings. I have to say.. it's pretty darn close if not identical to the original. All that's missing is the complimentary kimchi and a side of green beans and black bean noodles to compliment their oh so delicious wings. Enjoy!
Ingredients:
1 1/2 lbs chicken wings (rinsed and patted dry)
1 1/2 c potato starch (mixed with salt and pepper)
6 cloves minced garlic
1 stalk finely chopped green onions
1 tbsp minced ginger
3 tbsp brown sugar
6 dried red chili peppers (remove seeds)
1/2 cup corn syrup
1/4 cup low-sodium soy sauce
2 tbsp olive oil
4 cups vegetable/cooking oil

I was living around the corner from San Tung some years ago, and I loved this dish. Now back in Europe, and miss it. I just tried your recipe and I have to admit it is extremely close to the original. Just finished eating my portion. Super delicious. Thank you so much for putting this out there, and compliment to your analysis skills!

Hope this helps! Ingredients: 1 1/2 lbs chicken wings (rinsed and patted dry) 1 1/2 c potato starch (mixed with salt and pepper) 6 cloves minced garlic 1 stalk finely chopped green onions 1 tbsp minced ginger 3 tbsp brown sugar 6 dried red chili peppers (remove seeds) 1/2 cup corn syrup 1/4 cup low-sodium soy sauce 2 tbsp olive oil 4 cups vegetable/cooking oil Recipe: 1. Cover each wing thoroughly with potato starch 2. Remove excess starch from each wing and let it rest for 20 min 3. In a medium pan on medium-high heat sauté garlic in olive oil for 1 minute 4. Add chili peppers and minced ginger and stir for 1 min (watch for burning!) 5. When ginger is fully cooked, turn off heat and mix in 1/4 c soy sauce and 1/2 c corn syrup 6. Mix in 3 tbsp brown sugar (or more if you prefer sweeter) 7. Increase heat to medium and add green onions and allow to boil for 1-2 minutes until sauce thickens to preferred consistency 8. Turn off heat 9. In a separate medium pan, heat 4 cups vegetable oil on medium-high heat 10. Deep fry wings until golden brown (about 14 min) and remove excess oil by placing onto paper towel 11. Turn heat on brown sauce to medium (add water to consistency preference) and add chicken wings 12. Mix sauce and wings together (avoid overcrowding) 13. Be sure to save enough sauce to cover all wings 14. Serve hot and enjoy!

I have to take time and thank you for this amazing recipe! I used to travel all the way from the UK to San Francisco once in a while to enjoy my favourite wings from San Tung. I previously tried another recipe hoping to recreate the taste but it wasn't even close. Yours in almost identical! Many thanks!

if you want it sweeter then use honey. Also if you don't have potato starch I've done it with corn starch and it was fine. Corn starch will not keep it's crispy/crunchy texture for very long though where potato starch keeps it crunchier longer. I see so many recipes replacing cilantro with ginger and that's not the taste to get IMHO. Ginger is very key in this dish. Good recipe.

Tweaked your recipe slightly: Added 1 finely chopped red Thai pepper to the sauce, used a mix of white and palm sugar with water instead of corn syrup, and finally, a tablespoon of tamarind sauce for the kick. Wife says my tweak didn't taste exactly the same as San Tung, but it was close. Thanks again!

You could try reducing the sauce more or adding some corn starch/flour water mix

This is awesome, but you are missing 1 key ingredient. White pepper. 100% Also, possible they use maltose instead of cornsyrup.

can I use corn starch or Arrow root instead of Potato starch ?

Corn starch should work too! Never tried arrow root starch though. Just remember to let the starch sit on the slightly moist wings for a little while for it to stick onto the wings before frying to get a nice coating :)
