Always loved the main repeating riff that Paul Simon played on this song. I can't think of a word to describe it. Mystical maybe. I would love to hear that riff on a hammer dulcimer. There are covers of Scarborough Fair on You Tube being played on a hammer dulcimer but they don't play that signature riff.
