1. History and Origin of the Sciatts
The word "sciatt" might seem unusual to many, but for lovers of traditional Italian cuisine, it represents a fundamental piece of culinary heritage. Sciatt are delicious savory pancakes typical of Valtellina, a mountainous region in northern Italy. The name "sciatt" in Valtellina dialect means "toad", and refers to the irregular shape of these pancakes. But despite the uninviting name, sciatts are a real treat, with a crunchy exterior and a soft, cheesy centre.
2. Preparation of the Sciatt: the secret is in the batter
To make perfect slops, the key lies in the batter. The combination of buckwheat flour and 00 flour offers an ideal consistency, while the addition of liquids such as cold beer and grappa adds flavor and lightness. The carbonated water, also cold, helps to make the batter particularly airy. Once the batter has been prepared, the cheese cubes are dipped into it and then fried until they are perfectly golden. A fundamental element for the success of sciatt is the formation of the characteristic cheese filaments inside.
3. Serving Sciatt: an experience in every bite
The sciatts, with their external crunchiness and stringy centre, offer a culinary experience. Ideal as an appetizer or as a snack, they are perfect to serve hot, accompanied by a glass of robust red wine. Their popularity has gone beyond the borders of Valtellina, becoming a beloved dish in many other parts of Italy. Every bite contains the authentic flavor of tradition and the passion for good food.

buckwheat flour 130 g
cold carbonated water 70 g
white grappa 20 g
cold beer 250 g
4 slices Casera cheese (1 cm thick)
