Chef Nini Nguyen shares her recipe for seafood gumbo. She shows us her easy, flavorful homemade seafood stock, a quick tutorial on the proper roux for gumbo, and includes a surprising ingredient that draws from her Vietnamese roots. GET THE RECIPE ►►f52.co/37USX2J
INGREDIENTS
Seafood Stock:
1 pound small crabs
1 pound leftover shrimp shells
2 onions
2 carrots
3 teaspoons celery stalks
Seafood Gumbo:
1/2 cup vegetable oil or butter
1/2 cup all-purpose flour
1 1/2 cups diced onions
3/4 cup diced celery
3/4 cup diced green bell pepper
4 cloves garlic, minced
Creole Seasoning (1 tablespoon granulated garlic + 1 tablespoon granulated onion + 1/2 teaspoon cayenne pepper + 1 teaspoon sweet paprika + 1/2 teaspoon white pepper)
5 quarts Seafood Stock (see recipe above)
Salt to taste
4 dried bay leaves
2 dashes fish sauce
1/2 teaspoon sugar
2 cups okra
1 pound whole crabs or 1/2 pound of lump crab meat
1 1/2 pounds shrimp (shell-on)
1/2 pound shucked oysters (optional)
1 pound mild white fish
2 green onions, sliced
1 tablespoon file powder
hot sauce (Crystal is my favorite)
3 cups cooked rice, to serve

You are so adorable. Loved this presentation and have saved the recipe! I want to have a gumbo themed party & this is perfect timing. I will definitely use this recipe. I love that you used fish sauce, I have been using that and anchovies for so many things lately. Adds a great depth of flavor.

I’m watching and watching and waiting. Then you said you’re from New Orleans. I thought so. The Vietnamese twist of adding the sugar and fish sauce was a nice touch. I never thought of sweetness beyond that of the bell pepper or seafood. Your video was relaxing, insightful and very well produced.

A) Great video! B) What does filé actually taste like? I’ve had it as an alternative gumbo thickener when peeps didn’t want to use okra, but I’ve never seen it used as a seasoning. I’m picturing something like unsweetened root beer, but I don’t actually have any idea.

I always bake my beans exactly for the reason that you explained. Heat consistency. Look for Marcella Hazan recipe for a warm bean salad that incorporates hard boiled egg yolk, anchovy and finely diced onion. It is complex and so delicious as a side dish.

as a person from new orleans and a home cook. I'd say the fresh onion and garlic have a different taste/quality than the granulated. it really makes a difference in building up the flavors.

That's a Cajun roux. She's doing a traditionally Creole butter roux which will burn at those heat levels.

Sam Clemmons ummmm what... Roux is roux plain and simple. There’s no “creole” roux or “Cajun” roux. It’s all the same. Equal parts fat and flour. What you use as fat is up to you. Butter is traditional. Some people use oil (which I hate). My family always used Lard or butter. And yes I’m Cajun (if you can’t tell by my last name) and a Chef.

When you say equal parts of butter and flour, is that by weight or by volume?

It's by weight. When making gumbo, a roux is made to thicken the gumbo. A roux is a 1:1 mixture of flour and fat- in this case, butter. The longer you cook your roux, the darker and more intense the flavor. For gumbos, you're looking for a darker roux.

Great recipe. I’m so glad you mentioned your roots! The Vietnamese community doesn’t get enough credit for its impact on south Louisiana cuisine. I have read 5hat the thickening power of flour decreases with the amount of browning of it……so a blonde roux with thicken more per ounce than a very dark roux….

people saying Nini adding fish sauce is a nice little tip and a little of her Viet influence into the dish; lot's of southern food calls for Worcestershire sauce. among the many ingredients in Worcestershire sauce.....fish sauce! (anchovies extract). just a little food trivia for ya.

I'm grateful that fish sauce has comfortably made it in american style cooking, but I am tired of seeing fish sauce as the "special ingredient". And it's always the same phrase they use too, "the special ingredient is fish sauce for that extra umami flavor". Let's just all agree fish sauce should be a stable household condiment and is the absolute superior condiment of all mankind.

Okra is what makes gumbo different from a soup or stew but no one is gonna call the cops on you. I have found that I prefer picked okra to regular cooked okra on the side.
