JP, we need more IVS videos! Maby a full meal cook on it, sides proteins and a desert... or may a long cook with varied temps.. an over night brisket. Then bump up for chicken and sides and another bump for desert.. no one really has vids like this. It will show case how this cooker can be run like an oven

Have you thought about doing a follow up video ( 1 year later would I do it again?) or something. I've have the LSG IVS in my cart for a couple years now but the 4k price tag has kept me from pulling the trigger. Loved the video and your down to earth explanations and observations.

If you live close to Willis Texas I encourage you to go check them out because they are built like a tank and worth every penny. I’m seasoning my large IVS like yours, it took an hour and half to reach 200° at that point I closed the intake down to 1/2 opening. Once it reached 250° I closed it to 1/4 opening on the intake. Seem to be ok until the temperature started climbing over 300° I had to open the main cooking chamber and release some of the heat. Once I close the door it climbs right back to 300° and now I’ve chock down the flue down to a 1/4 opening and the intake closed all that worked but took quite a while. But like you said it’s a learning curve and I’m having a blast with my LSG insulated smoker. So what I learned is this smoker is like trying to stop an oil tanker, so if you wait too long to make your adjustments you’re going to over shoot your desired temperature, so make your adjustments early and wait to see how it affects the temp before making another adjustment. Oh yeah I waited 5 months and three days for my IVS, So when it was completed I went from Arizona where I live to Willis, TX to pick it up from Lone Star Grillz and took it all the way to Southern Florida to my mom’s house. How long did you have to wait for your IVS?
Thanks Gene, appreciate you watching and commenting. You are absolutely right, if you let it get away it will be hard to back track on it. So start early. I usually start closing the ball valve to half open 50 degress before my target temp. Then 25 degrees before my target temp I close it to 1/4 open, then when i hit my temp it will only be an 1/8 open. There is a learning curve for sure. Not sure how long it took I wanna say about 4 months for me. Thanks again.

Appreciate you watching and asking that question Colorado. Right above the firebox is a heat deflector and a water pan. So the majority of the heat comes up on the sides but once its hot enough it will radiate off the water pan and heat deflector. Thanks again.😎

Hey there Curtis, appreciate you watching and commenting. Depends on the situation. If i got a big cook for some customers and will go through the wee hours of the night I’ll use the insulated. If I’m cooking for friends and family then I would use the offset. Both are great smokers. Sometime Ill use both at the same time of the party is big enough. thanks again.
Why did you buy this one? Your cabinet smoker is awesome! Is it just the set it and forget it? Will you do a brisket in each at the same time time to compare quality and taste? I just ordered the 30 inch vertical yesterday from them. What was your lead time? Sorry for the 101 questions! Lol
