One thing that baffles me is the fact that the ai can do those crazy minute movements during an arial, however they can’t do something as simple as a front flip for speed. Why does it fumble all over itself?

If you don't make the right movements during an aerial you get immediately punished for it, whereas if you miss a flip on the ground often times you aren't noticeably punished or only are 20 seconds later. For humans, it's intuitive that keeping speed is good, but bots use reinforcement learning, so they actually need to be punished for plays to correct them. When it's something that doesn't result in immediate loss of possession/rewards then it's hard for the bots to learn.
