the picture in 1:30 is not quadrotor , so modeling of dynamics is suitable ??

The axes he used are the same as depicted in the picture, I believe. Doesn't matter if it's a Multirotor, Fixed-wing, or any Air-Vehicle. That is the most popular convention used for aerial vehicles.
