Ingredients:
For the broth:
Meat for broth
2 bones
Leek
2 carrots (yellow and orange)
Ginger root
Onion
Parsley
2 bay leaves
Black pepper
Lovage
Mustard seeds
Juniper berries
To prepare semolina dumplings:
Semolina 100 g
Butter at room temperature 50 g
Egg
Salt
Nutmeg
Broth:
Cut the onion into 3 parts along with the husk;
Add a little olive oil to the skillet and fry the onions on both sides until golden brown;
Add a little salt to boiling water and add the meat with the bones. Bring to a boil, remove the froth.
Add vegetables and spices to broth
Bouillon cube
Boil the broth for 2 hours.
Use a colander to separate the broth from the meat and vegetables
Finely chop meat and carrots
Semolina dumplings:
Whisk butter with an egg
Add salt, nutmeg and beat again
Add semolina and mix everything well
Refrigerate for 15 minutes
Make dumplings
In lightly salted water, simmer the semolina dumplings for 5 minutes
Add the chopped meat to the plate. Carrot. Broth. Semolina dumplings. Finely chopped green onions.
