The latin text is quite different from the others I've heard (both in II and VI gregorian mode), especially 19th stanza. Could you tell me why? Thanks

This is the version from Graduale Romanum 1974. As far as I know, they tried to return to more ancient versions of different hymns and sequences. Se also: stabatmater.info/stabat-mater-latin-text/

How did you chose the first note with you started/the tone? Tonality? I don't know how to say it

First criterium is - to be able to sing the highest and the lowest tone. If there are several possibilities, I pick what sounds better, what fits better for me and the singers singing with me. When there is some reciting tone (psalm verses for example) this tone is commonly (very often) set to A (440 Hz).
