SERIKAYA is a pudding made out of jaggery. It is the no 1 dessert from Sri lanka and most commonly known as WATTALAPAM. #jaggerypudding is a very famous #Srilankan dessert.
Although it is influenced from the java strip many moons ago, this dessert has a crowning glory in Srilanka. Although mainly made by the Srilankan muslim community, its a dessert enjoyed by all communities alike.
There are many recipes out there, however this recipe is a quick and easy because the method is given to us by an expert who makes the wattalapan with such ease. Aunty thufa is an expert at cooking specially making desserts. follow this easy simple guide to make one of the best and desserts from srilanka. Its like an enhanced caramel pudding. Some people like to eat it warm but you can also keep it refrigerated and eat it cold. Either way its just so delicious.
The ingredients are below:
•7 eggs (for 6 people).
•1 pound of srilankan jaggery (palm sugar).
•pinch of nutmeg.
•2 TBS Of vanilla.
•2 cups of thick coconut cream. (if you cant find fresh coconut milk , you can use coconut milk powder or canned coconut cream too).

This video reminds me of my mom making serkaya. I remember she always tells us that the eggs should be beaten very lightly with a fork and not to use the egg beater, for the texture would be hard. She uses nutmeg as the spice saying that it is the nutmeg that makes the serkaya give the authentic taste.

Yeah bcz of lots of modern wattalappn recipes, some people hate wattalappn without knowing how it really tastes, coz mostly they are adding jaggery egg and unnecessary spices only 😒. Our Mom add pinch of crushed shallots and pandan to the mixture before sieving it.. i heard its done to get rid of the eggy smell and i guess it produces some sort of gud aroma to the wattalappn

Exactly what my mom and grandma did. Shallots should not b crushed too much. Just one or two smashes. They put small pics of pandan leaves to the hot jaggery syrup and switch off the flame

Its palm sugar. 😊 the srilankan version has caramalized sugar in it so its dark in colour.

Hi! This looks soo good...Would love to try this recipe today. Just a small clarification..is it 1.5cups of coconut milk or 2 cups of coconut milk as mentioned in description? Also how many grams of jaggary should I use..450g? Thank you so much 😀

Its one and half.. but you can put up to two cups for 7 eggs. No problem at all. 😊

Yes you can... But make sure it is good Treacle... because some are watered down or full of sugar and you might not get the right taste or texture.

Hi there it usually takes about 20 minutes but also the time really depends on the way you steam it and the level of heat. Check if you can see the Wattlapam rise and steam up to the top of your bowl and then you can take a butter knife and prick it right to the bottom and see if there is any liquid touching the knife. If it comes out dry then it's done.

Perfect and thank you. I wish the screen can come alive :) Ruzaina here is a challenge for you. Please show us how to make ADA. This is not easy. I don't mean the type they sell in shops which is like rubber. My late grandma makes this. Yes if I remember the aroma and flavour is out of this world. Too bad none in our family learnt the art of making this ADA from grandma. Truly a traditional dessert of Sri Lanka should be recorded in the books of minority traditions. TQ

As much as i respect your views. @ravia mohamed. Could you tell me the origins of watalapam? vanilla maybe a modern twist but adding nutmeg is the orginal and age old recipe.

There are various ways to make Watalappam. I know some even use salt 😊 , yes the idea of putting nutmeg and vanilla is to suppress the smell of the raw egg which will be still found after steaming and the smell can be revolting for some. When we were kids we go visiting all our relative's homes on Eid day. We don't mind eating all the nice sweets they serve but we will never eat Watalappam except in our own home. The reason not everyone can make it perfect and we gauge the expertise of culinary art of each house by checking how well they can make the Watalappam 😊
