Thanks so much for sharing this video - It is so evident that both chef & sous chef are highly skilled - I can literally taste the lip smacking food, simply watching it - preparation is especially quick, efficient, clean and very skillful (compared to other videos I have seen) - the kitchen itself is also very tidy (a place for everything and everything in its place :) - I will make it a point to visit you guys at 1-133-5 Omiyacho, when I am in Japan - I can't wait to eat your Mapo Tofu (looks fiery hot :P) and Fried Rice - highly honored to see chef and sous chef in action - Kudos to you and kudos to the chef/sous chef - all the best to you all

I was just wondering, what do you do with the trimmings of your vegetables and the such? Do you give or sell them to people who have animals such as farmers?
