Pad gaprao is my favorite too. I used to eat it everyday I cooked it with chicken breast and I like my pad gaprao with a big handfull of dried chilli. If you can develop your spiciness terlorance I would like to recommend you to try it with dried chilli instead of fresh chilli. It's more fragrance more aromatic the tip is you have to fry the dried chilli and garlic until they are fully cooked the garlic should look golden that is when the fried garlic and dried chillli's aroma coming out. And then add minced pork and cook it then season it with 2 tablespoons of oyster sauce, 1 tablespoon of light soysauce, half table spoon of fish sauce and 1 tea spoon of sugar (if you have brown sugar use it) it tastes so much better than white sugar and half teaspoon of msg. And if you want it tastes a restaurant you should add the chicken powder. It's seasoning powder from Ros Dee(Pronounced Rod Dee) brand just a little bit(a pinch) and then add holy basil leaves and and a little bit of dark soysauce 1/2 or 1 teaspoon and stir it for few seconds and do not overcook the basil because it will loose its flavor.
