Looks so hearty and delicious. Also "Shakshuka for One" sounds like it could be the title of a trendy romance book. - After her fiancé breaks up with her just two week before their wedding, Lindsay Scott decides to still go on their honeymoon by herself to Morocco. Staying in a luxury bohemian styled hotel by herself, her days are dull and repetitive, lying in bed for most of it and living off room service for every meal. But soon she realizes that the man who's delivering her meals.. is filling her with more than just food. A New York Time best seller, and described by book reviewer Jack Edwards as "A warm dive into finding hope and love in places you didn't know was possible, and a celebration of cross cultural acceptance." "Shakshuka for One", now available at Barnes and Noble. -

Here are a few tips for a much better Shakshuka: 1. You have to really sear (almost burn) the onions and peppers before adding the tomatoes. That's absolutely crucial if you want to get an authentic Shakshuka flavor. 2. Use either chopped fresh tomatoes or canned whole peeled tomatoes for the sauce. You want those fresh bits of tomato in the sauce for better texture, it shouldn't be too smooth. 3. Break the eggs directly over the sauce, do not make a well for the egg. That way, small pieces of the egg whites will incorporate into the sauce, making it much better. 4. Finish your Shakshuka with a drizzle of extra virgin olive oil on top. It really adds to the flavour. 5. Do not put any mushrooms in your Shakshuka, ever!

I made this for my daughter and myself when she was staying with me recently, and I can tell you, they were absolutely delicious!!! I made two variations to the recipe because I didn’t have the ingredients in the fridge. First, we used a little dollop of sour cream under the eggs and I used crumbled goat cheese on top instead of feta. Also, rather than cooking the eggs in the fry pan, I simply poached them and set them in the depression. I can’t wait to make them again, they were wonderful.
