SHAKSHUKA RECIPE:

Ingredients:
2 Tbsp Olive Oil
1 yellow onion, finely chopped
1 clove garlic, minced
1 tsp ground cumin
salt and pepper to taste
1 lb cherry tomatoes, halved
6-8 eggs
herbs for garnish (chives and basil)
1 Avocado for topping
Instructions:
1. Preheat the oven to 400°F.
2. Prepare the ingredients: chop the onion, peel the garlic clove, halve the tomatoes, season tomatoes with salt and pepper, and chop the basil.
3. Heat oil in a large oven-safe skillet over medium heat.
4. Add the onion and sauté until golden brown and tender, about 8 minutes.
5. Stir in the garlic and cumin, and cook for 1 minute.
6. Add the tomatoes and sauté for 1 minute.
7. Transfer the skillet to the oven and roast for 10 minutes.
8. Remove from the oven, stir, and make small wells in the vegetable mixture. Crack 1 egg into each well.
9. Bake until eggs reach desired doneness, about 7-8 minutes.
10. Sprinkle with chopped basil and chives, and top with avocado slices.
11. Serve and enjoy.
