In this video I share how to prep your sourdough for the last rising. First we laminate (spread the dough in a thin layer), then fold and roll. Next, we build tension into the loaf by pushing and pulling the rounded loaf until it feels tight. After that, you place the loaves in the proofing baskets, rise in the fridge, and choose a scoring design of your preference.
