This was explained very well I loved the calmness and even tone however, specific noises in the video I thought were coming from my house in another room then I remembered no one was here! LOL!
How interesting, I usually do a preshape and then shape the loaves, put them in the bannetons, and immediately stitch for more surface tension. I’m curious about what the difference is between doing that and letting it rest before stitching. I will have to try it!
I do the same as you but get a bit frustrated because the dough feels like it tears a bit during the final stitch in the banneton. I wonder if waiting might give the gluten some time to bond again. Have you now tried the stitch after letting it rest for a bit?
I guess I'm wondering why you're working your dough so much. I don't go through near that many steps. I cut my dough in half and shape and in basket then fridge. A lot less handling of the dough. So why do you work it so much?
