In this video I sharpen a Japanese kitchen knife that I originally purchased in Japan. Included at the end of the video is extended footage of where I bought the knife from. A quaint little shop that is a throw back in time.
Japanese cutlery is awesome, they have so many knives for specific purposes. The knife I sharpen is beveled to the right so anything you cut leaves a flat vertical edge on the left hand side, I like using it to slice cured meats.

I went to that shop today August 19th 2023 and had a similar enjoyable knife buying experience. The couple were very friendly and helpful. Looking forward to using my new knife.

Thanks for the video. I went into the shop today. The old couple are well. Their English is improving. I purchased a vegetable knife and was given the 'lecture' as he called it.

The blades may be good, but the handles suck. Give me full tang and a decent handle.
