Hamburger meat (minced beef), is a really versatile meat to have in your meal planning arsenal. But sometimes, I want to change the texture of ground meat to something finer, so I boil it. And it's better for your plumbing! Let me show you how!

OMG! Finally someone knows not to drain fat down the drain. Every video I've watched they would drain the fat down the drain with hot water. Thank you for explaining this to everyone.

It’s common sense for those with septic systems but everyone will pay if all drained fat in public systems ..

It's probably not going to harm anything if you do it once or twice. Definitely not good for long-term disposal.

I've been looking for the best way to prepare ground beef for dehydrating and never thought to boil it. This would give me clean beef with minimal fat residue for drying, tallow for cooking, and broth for soup. PERFECT! Thank you.

I’ve been doing this for over 55 years🙂 My mom and dad taught us to boil GB when it was going into something like hot dog chili, spaghetti, sloppy joes, vegetable soup, etc. We would use a potato masher to break it into a smaller or finer GB, and drain it. As an adult, I went further and would drain it and freeze it in 1 lb portions, to put it into freezer containers. Then I started using freezer bags and vacuum sealed the bags and put it into the freezer. When I make large batches of hot dog chili or taco meat, I always portion it out, cool it and put into vacuum seal bags and freeze it. So you also have wonderful beef stock that you could save for soups and other purposes later. Rather than dump it down the drain. I would throw a few vegetables into it and salt and pepper and save it. Great explanations!

I always pour off the grease from beef into a veggie can or bowl, whatever is handy, let it congeal, the separate solid from liquid and solid goes out in the trash. I’m blown away that people actually pit their fat into the sink drain.

I take the frozen stored beef fat, render it down, and then pressure can it in wide mouth pint jars. It’s the best fat. I use the water to make a soup. Absolutely nothing is wasted

BIG, BIG THANKS! Long story, but I bought a recipe book, and the author mentioned this technique. I thought she was crazy. I've never heard of boiling beef. Now it makes complete sense. Furthermore, with all of these cooking gurus running around, I'm surprised I haven't heard of this method before. The author's name is Cathy MItchell. The cookbook touts, "As seen on TV". I personally hate cooking. I find it too time consuming until I get hungry enough. I, ironically, collect cooking books. Again, thanks for the video.

So cool, I’ve been cooking all my life and will try this. I can see a lot more grease gets boiled out then I brown out and I would think the meat will absorb your seasonings better for better flavored taco meat. Thanks for making all these videos, you’re very sweet and smart

This is a great tip that I have never heard of, I hate cooking ground meat and having it turn hard when you are done cooking it...could also use a colander over a bowl to drain it off which is what I will do. Thank you for this...I learned something good today : )

Ditto! I'm planning to give some beef to my kitty. But it can't have any onion in it or it will poison him. So this is great for getting the meat cooked so we both can feast.

It's easy enough just remember that optimal storage is still the freezer. But it can be taken out for short-term camping/hiking trips or meals in a jar easily.

I needed to learn this for my dogs as they have they get sick from store bought dog food and I have always done a lot of cooking over the years but just never boiled meat before so I thank you and my dogs thank you also now I know how to make taco meat and thanks for plumbing tip as I have had backed up plumbing its no joke.

FWIW for those who don't object, both the beef fat and broth can be saved for further use. After chilling and removing the fat, beef broth can be pressure canned. Makes a great addition to beef soups and stews. Economical, too! Since mason jars are re-usable, the only cost is the lids and the fuel expense for the stove. Don't pour it down the drain when you can put it on a pantry shelf. The fat can also be used.Strain and refrigerate. If you want it further rendered, GENTLY evaporate some of the remaining water - be careful as you don't want to burn it or start a fire!!. Use it for pastry, biscuits, gravy and often as a substitute when a generic oil is used in a recipe. Experiment before tossing a good resource into a trash can or flushing down a drain.

I clicked on the video thinking.. That's gross! I left the video thinking... This is genius! LOL, I prepare ground meat for the freeze dryer. This is the perfect way, not only to get a better texture in the finished product, but, now I have a huge pot of broth, which, I also freeze dry. Plus the fat for other dishes that need it. Great video.

I also saw someone brown in skillet, rinsed it and then boiled it. She then dried it off and placed in a dehydrator for long term storage.

Nice tips, great way to get a step ahead on nightly meals. When I skim off beef fats I'll save them in a glass jar in the fridge. I mean bacon grease is still king but beef (and chicken) fats do add great flavor to dishes and sometimes I use that instead of butter when I need to saute veggies.

I love your videos and hope to one day begin dehydrating. I just wanted to say that, in regards to the hamburger water left in the pot instead of throwing it away it can be boiled down so it will get a little more beefy tasting . Macaroni noodles can be boiled in it along with garlic, onion powder, some of the hamburger, and cheese if you want and it is a pretty good casserole. The sky is the limit as what other things can be put in. I suppose taco seasoning would be good too. That way only the fat is wasted.

I do something about the same. I don't use as much water when I do it. Then I put in jars for pressure canning. I let the liquid cool remove the fat then use the liquid to put it the jars to fill them up leaving head space. There is some good in the water after you remove the fat. If you remove the fat then cook down what is in the water there is a gelatin like to the liquid. I don't cook it down and most of the time I don't end up using all of the water from cooking the meat. But I think there is some food value in the water after letting it cool and removing the far. I size the jars I pressure can to what I want to use it for. If I will use it to make up a 8 qt pot of beans I use qt jars. That with about 2 lbs of beans a pint jar of onions I canned, a pt jar of tomatoes, with whatever I want to add makes up 8qt , that I can put into pt jars and pressure can to eat when I need it. As much as possible I grow what I can. The city will not let me grow beef in my yard! But I can grow beans, tomatoes, onions, some peppers. Not had luck with corn! Just made strawberry jam most of them I grew.

I put my cooled beef liquid into the fridge overnight, the next day i scoop the fat from the top of the cooled beef broth and i can the beef broth for future use and i freeze the beef fat in a freezer bag and i use them both for frying vegetables and for beef stock when i make soups and stews. I do the same with chicken backs and chicken scraps. Money saver for sure, healthier than canned and better tasting too.

Wow, I am going to do this. I am purchasing a canner now that have my gardening off to a good start. Question could I vacuum seal and put in the freezer as well. I plan on doing some in jars as well with my canner.

I slow fry and use a berry press to remove a crazy amount of fat/water. Even Xtra Lean gb, I can draw it down to 50% of original weight. Curious if boiling removes more fat.

I also do this when I make macaroni this helps my ground beef get tender because Otherwise I get this rubbery gummy texture while chewing it also helps remove the fat because the fat in it stinks to be honest 😕 this is awesome thank you so much for this video

I discovered that I get very tender ground beef when I fry the thawed ground beef using a medium heat setting on an electrical coil burner with sufficient stirring and tossing, so as to prevent any of the meat from being heated above 160° F. I am always amazed at how tender the cooked ground beef Is, when cooked in this way.

Yes I do for the freezer. You can can it. You can also dehydrate it, however, it will not be shelf-stable over time and should be stored in the freezer until needed for a hiking meal.

If you want to can it you can, I freeze it. A tender texture isn't always a bad thing, but hamburger meat canned is one of those you love it or hate it things, so you'll have to try out a few for yourself. You can also dehydrate it, though the optimum storage for that is in the freezer - but it can be taken out for camping meals, short term meals in a jar, etc.

I've seen this way to do batch cooking, but have also seen using an electric pressure cooker to batch cook. Have you used that way? If so what are the pros and cons of both? I am trying to stock up my freezer and shelves and was wondering which would be better. Any help or info on either would be great. Just started to watch your videos (thanks to Suttons Daze ;)) and have been enjoying them. Thanks.

Batch cooking is a technique to do large quantities of meals or ingredients and put them up for later use. I don't normally boil meat (except in the case of meat like this). It's a tool. This technique wouldn't work in an electric pressure cooker in quite the same way. However, using an EPC is great for doing chunks of meat quickly, or doing 2X a meal and storing up the rest.

I cook ground chicken in water, but I let the water cook out of it, then drain what is left. One question - do you ever dehydrate cooked ground beef? Heidi at Rain Country does, and I sometimes dehydrate the grounf chicken.

You can. I choose to invest in a shelf-stable variety instead in freeze-dried for meats.

You can do whatever you'd like with it. We froze it. It wasn't about how we used it later, but preparing it in the moment.

I'm late to this, but I didn't see how you removed the fat. At the end you showed how it remains on the top and can be skimmed, which is easy to do, but as you scoop that meat out and the liquid falls, the fat doesn't necessarily get removed that way...or am I wrong? Maybe you are saying the fat that remains is insignificant when you scoop it out? But then you say some people rinse gr. beef in hot water. No matter how you rinse or boil, your channel is really good!

a I likely would cook it in broth and simmer it till the homemade broth cooks out. Fresh GB I BROWN IT THEN AD BROTH AND SIMMER till gone. it tastes better and has more nutrition seems it would work fore the dried ...either cooking or rehyderation

Great - you do what you like. I really prefer the texture this comes out to - and it's not lost any nutrition that browning doesn't lose. I don't boil it to death.

Is this method good for leaner meat like bison and lamb? And can a person go one step further and dehydrate the cooked meat?

I've never tried it, so I cannot say for sure. But I find it works this way to remove the fat out of the hamburger meat because it can be a greater percentage than bison or lamb. And yes, you can then dehydrate it , then store if for a few weeks on the shelf, but for long-term storage, you'll have best results in the freezer. I haven't quite got to the end of the video but I definitely would like to know how to flavor the burgers lack flavor because of the lack of Grease or oil any healthy options?

When you put it into any other dish, you'd simmer it in the sauce you're using. you don't use this to make hamburger patties, but to put into another dish. So if it goes into spaghetti - give it time, it soaks up flavor.

Boiling meat is a new thing for me... Yet some call stew, boiled dinner. I did this to remove fat for freeze drying which is not conducive to fat nor high sugar content. Thereby no freeze-drying sausage, dang. It works fine and is tasty Believe it or Not! Made chilly with my last batch, soup, casserole to tacos, limitless. Thank you. Make soap, don't feed any to Rover or you'll be busy. Boiling chemically changes the grease somehow... perhaps as in the preparation for the prior. Ash: Remember when they summarily washed your mouth out with soap? I do.

Also, a pound of ground meat in the store would cook down into less. How do you portion out your meat for one dinners worth? Do you use a scale?

Does this turn out more moist than if you browned it on the stove? I find that I don’t enjoy tacos because my meat turns out to be quite chewy. I want to cook beef that melts in your mouth as you eat it sort of like Taco Bell. What am I doing wrong?

I have no idea what you're doing wrong - if you are boiling it, it does come to a finer texture than browning it. Smaller pieces, no browning, and finer texture.

Once the cooking water is defatted, could you then use the water as a soup base, cook rice or pasta, or some such? Seems kinda a waste to just dump it. Great idea tho, and a great video as always! Much love from Oklahoma

A solid lump of ground meat frozen? I wouldn't. Just defrost it first. You'd spend so much time fussing over it to pull off outer layers to get to the core, and you might have it at an unhealthy temperature when the boiling water is affected by the sudden cold.

I forgot to take the meat from the freezer to thaw for a meal and thought what could it hurt to boil it? I did, drained it, seasoned it up and no one was the wiser. it was cleaner tasting and evenly cooked, since it didnt have any grease and the meal was delicious!, so i would just suggest trying it with a little bit of meat and see uf it works for you, by the way, I also use this method for my frozen ground turkey.

The Purposeful Pantry I use the boiling method from freezer and set it at medium high and it actually breaks it up since water is at a rolling boil, about 20 minutes and then break it up more as it cooks down before I season it and I have never had a problem and I've been using this method almost 35 years.

This is how I recommend preparing ground beef for dehydrating. But by the safest standards, it will need to be kept in the freezer.

? can this method be effective for pork sausage? It would seem so. I cooked off the pork, drained, used a salad spinner to pull off more fat but even though dehydrated into crispy bits, it's still really fatty/oily. Please advise

Sausage contains much more fat than most hamburger meat. You can do it, and expect to then store it in the freezer, but I wouldn't recommend it.

I just boiled the previously dehydrated but still super oily sausage, skimmed all the fat off (took awhile!) and now have fluffly dry pork sausage with flavor still in tact. I'm hopeful it will be just fine in a few hours all thanks to the boiling method for removing fat!!

Yesterday I boiled about 15lbs of ground beef. It worked really well! Much faster, easier and less messy than frying it. Apparently many Mexican restaurants boil their ground beef. Thanks a bunch!

Wow, Darcy - great idea in boiling the meat first! I never thought of how much fat actually shows up in ground beef when boiled. Now, I know the importance of boiling my ground beef and cooling it down first before dumping it into the trash. I usually make it a point to scrape out the grease from my frying pan, (i.e. bacon grease) then throwing away in the trash instead of washing it down my sink. So, quick question... What product would you recommend to best clean out the residual grease in my sink pipes? Dawn or Bleach? I like to use "Dawn" for washing my dishes and pans because it cuts through the grease and hopefully helps clean out the grease in my plumbing. However, it's more important to me health wise, that by boiling the meat will help cut down the amount of fat from clogging my arteries; which is more important than my pipes in my sink.

Yes, but it's not reliably shelf stable, so you'll want to store it in the freezer for optimal storage. It can be used for hiking/camping meals and short-term meals in a jar.

Until it's done. It will depend on your meat, how much you have in the pot, etc. You'll judge it by how it looks for you.

Wow great! Question: After cooking this way, should i add it to the dish and dry together? Because I want the flavors to be absorbed in the meat.. I want to make chili con carne, and I know it is better to separate the vegetables (125F) from the meat (160F) during cooking and the drying process. I'm new to it. Thanks.

i don't recommend dehydrating beef at all because of the fats/proteins and long-term storage safety. But if you're doing it for a hiking/camping meal you plan on eating i the next short bit, and storing in the freezer, you can do it together and make sure to over dry, then store in the freezer until you need it for your trip.
