Aa a child we used to "parch" the corn in a way bigger pot with ashes (the by-product of the burnt firewood.) Or sand. Some of the corn would pop (popcorn) whivmch we would eat and the unpopped grains we would beat in the mortar and add sugar. Those were good days

I've only tasted it once in my life. Tasted like dust and lots of coughing. I just found this out and thought I'd share. Asham is thought to have originated in Africa, with the name asham derived from the Akan word o-sĭám meaning "parched and ground corn". Other names include Brown George (Jamaica), kasham (Grenada), sansam and chilli bibi (Trinidad), caan sham, casham and kasham (Belize). Just wow!

Definitely directly from Africa brought over by the enslaved peoples to the Caribbean. It's called cham-cham (sham-sham) in Haiti. I'm Jamaican and remember asham well from when I was little. I worked in Haiti for a few years and that's when I encountered cham-cham. I wonder if or why it didn't come over to the U.S. with that group of enslaved people. Is there a similar snack in the U.S. South that I'm not familiar with that has its roots in this snack?

Growing up ours was parched in ashes. You had to beat it in the mortar as soon as it came out the pot and you sieved out the ashes as the colder it got the harder to beat. But the leftovers if any was not wasted.. We could boil it down pretending it was hominy😅 Have to respect those still doing it. Have to treat it as a delicacy 😻

@@jeanblesz4282OH NO, my dear, if you lived 77 years ago in the parish of ST Elizabeth, then you should know the difference between Asham and Hominy corn, my father had one of the biggest corn farms, people used to come from all over to buy corn , let me educate you a little my mother used to soaked the dry corn in Ashes water over night, then she would stripped ever single grain of corn of the little film that over it, then you would see those beautiful grain of corn That is ready for Hominy , Now my sweet, sweet Asham She Parch the corn and beat it in the mortar and sift it , she used coconut milk sugar and other spices and as I said she turned it like turned corn meal, so you see my dear there is lots of things that gone by many years ago that you don’t know anything about, so if you care you can give this Recipe a try.
