・Espresso 30ml
・The Ritz-Carlton Tokyo Special Blend Tea Syrup 30ml
・Passion Fruit Puree 10ml
・Fever-Tree Premium Tonic Water 40ml
・Egg White Powder 1/2 tsp
・Tonka Beans As needed
・Frozen Brown Butter As needed *1
Garnish
・Black Cocoa Tuile *2
・Ritz-Carlton Tokyo Original Chocolate
Instructions
*1 - Frozen Brown Butter
In a heated frying pan, combine butter and sugar. Stir while cooking until it thickens, then cool and solidify in the freezer.
*2 - Black Cocoa Tuile
Mix black cocoa powder, flour, olive oil, salt, and water. Cook in a hot frying pan until it solidifies.
How to make
①Place ice in a glass and chill it. In a plastic container, combine espresso, The Ritz-Carlton Tokyo Special Blend Tea Syrup, passion fruit puree, and egg white powder. Add crushed ice and blend using a blender.
②Discard any excess water from the glass and pour the mixture from step 1 into the glass. Top it up with Premium Tonic Water. Grate Tonka beans and sprinkle them over the drink along with the frozen brown butter.
③Place glass with garnishes on a plate with Ritz-Carlton Tokyo Original Chocolate, then serve the prepared drink from step 2.
