Nice Pits is there any reason you wouldn't smoke in warmer for smaller cooks, I think a reverse sear grate in firebox be another nice addition for smaller amounts of product.

Be careful with your meter probe, they’re not supposed to be exposed to direct fire. That tomahawk looked awesome!

how do you feel the difference in quality is between the worksmanship of the shirley and the lsg? I have an lsg smoker and grill but shirleys always been interesting to me

Hands down, Shirley is a masterpiece. But I ran my restaurant with the LSG large IVS and it performed perfectly. I’d say that they are both monsters. Shirley wins on versatility. LSG IVS wins on set it and forget it.
