I use a M1 macbook air and some rendering tasks I use it for take HOURS. Ordered the Macbook Pro M3 Max with the 16 core CPU. It should significantly reduce the waiting around time.

the best tools are the right tools how ever i dont belive laptops shold be used for video editing at least not for heavy duty stuff as this causes more problems then its worth , but the M3 laptops might change my mind so iam wating for all the bench marks to come in then will see , how ever a businsess going graphics and video editing should not be using the Mac Mini , a youtube channel sure but a graphics and editing business no way man your way off on this stuff.

Lol I use a M1 MacBook for editing and it's great. I also use two m1 Mac minis to edit on at my day job and they work phenomenally. Also any new video editor wanting to build a business doesn't need to was $2000+ on a set up when they've had no money. Pay less than a $1000 recoup your cost, build proof of concept and then scale.
