So glad I found your video. This totally makes sense. I typically finish my steaks over charcoals and butter which takes it to the next level. I'm doing a brisket tomorrow and was looking at my jar of ghee wondering if it would work the same magic. That's when I started looking to see if anyone was doing this and found your video. Make sure you use ghee and not straight up butter though. Ghee is butter with a much lower water content making it richer.

You can use regular stick butter,once it has melted strain it into a jar. If you want you can strain it again using cheese cloth I feel as though this takes away too much of the fat/flavor.

I absolutely would... Do you think if you did a mix of beef tallow and ghee you could get a best of both worlds scenario? Maybe a 50/50 mix would give you some of that fatty/beefiness you usually get from the tallow while also getting some of that butter flavor.

hey Steve, I did my 5th brisket in the Weber Kettle by following your videos and I wrap it with pork tallow and it was the best brisket that I had make, I noticed that the cooking process in the weber and specially in my area which is 2200 meters above the sea varies quite a lot from cooking briskets at Texas' sea level (600 meters above the sea) quite so that I finish the brisket in 9 and a half hours at 190f internal and even with this low temp the brisket was near to get dried out, I'm in Mexico btw (Zitacuaro to be precise), cheers!

Grind brisket fat trimmings and cook in an instapot, average choice brisket in US will produce 20-30 oz. of pure tallow. Local butcher might sell fat also, grinding first is the trick. The solids that are left make great treats for dogs. Best from Texas!

Have not used ghee but plain butter works great. Bacon grease ups the smokiness for pellet smoker brisket. But smoked tallow is the most efficient use of trimmings.

Makes sense as there is a lot of steak houses that put a pad of butter on their steaks when finished. The oil thing makes no sense. Oil and water don't mix. During the cook, the tissue of the meat releases its moisture or "water"......oil and water don't mix so that oil will separate and just site there making your bark soft, oily and greasy.

Your trim is looking much better compared to past briskets. I can't believe you were daring enough to use canola oil for part of your brisket. I concur with another commentor that you should have smoked ghee next time

I needed gravy for a sous vide sirloin roast last week. Instead of using butter in the roux for the gravy, I used wagyu tallow and some of the sous vide bag juices. WOW! Talk about beefy flavored gravy. Some of the best beef gravy I have ever made. EDIT: My gravy comment is a bit off topic but I wanted to pass it along. I also saw the Harry Soo brisket series and I'm liking seeing someone else give their opinions. Guess I need to try both the Ghee and the lard on future briskets. Already have done the tallow and I thought it was good but it took away a bit of the regular "brisket" flavor for me.

Weirdly, my first ever attempt at brisket, I did a ghee + thickened beef stock mixture in my wrap (I didnt have tallow) but it turned out absolutely amazing, and was not quite the same as doing a tallow wrapped one. I am actually half tempted now I have tallow to do a 50/50 mix of tallow and ghee and see how that goes.

I have had tremendous success with the foil boat method. Would love to see you do that and then pour the tallow, ghee, or pork fat over it for the rest period without covering the top of the Brisket.

Great stuff! I like to wrap my poormans brisket/ chuck roasts in bacon grease. I wouldn't do that with a more expensive brisket, I also season them with a lot less salt and more of a black pepper, paprika, garlic and onion powders. Got to try Ghee sounds awesome, I bet that would be killer for a rib wrap!

A great comparison. Ghee has a nice nutty flavor. I will give it a try. I have been using smoked lard ever since the Harry Soo experiment video that you have referred to. In my personal judgement, lard triggers our taste buds, with an association to bacon fat which we are accustomed to. Harry Soo's favorite was to wrap in pork caul fat. I have tried it, it gives even a more pronounced pork fat flavor. My favorite method has been to inject a mix of lard and gelatin seasoned with salt and a little of fine mesh black pepper. My next brisket will be that, with butter ghee wrap. And for a savory flavor, on a part of the brisket, I will saute onion and garlic in the butter ghee seasoning with seasoned salt, then strain away the solids, and use that for the wrap.

I've tended to wrap my ribs with the parkay squeeze butter, I didn't grow up in the Texas BBQ scene so it isn't heresy. I've been wanting to walk away from parkay, because it adds a big dose of salt flavor. Found just doing broth wasn't working for me. Tried lard last weekend and it was pretty awesome. I might try some unsalted butter and ghee next!

Certainly would love to try with ghee!! Great idea! Butter wrapping with pork ribs is relatively new to me and I love it! Probably better with brisket too!😁👍👍. It’s just that tallow is already paid for by the trimming process

You should do different cultured fusion inspired brisket eg. Korean bbq brisket, Indian tandoori brisket, etc. I would try it, but I don't have the money to buy a smoker let alone multiple briskets lol

I think you are right, I tried tallow before and when I used grass fed butter when I wrapped my brisket it’s came out a lot better. From then on, I only used butter. I only apply it to the flat area. Seem the taste permeates to the entire cooked meat. Thanks for this video. It confirmed my theory.

The fat from different cuts of beef has different flavours. I'd be interested to see a video comparing tallow wrapped brisket with tallow made from the fat of brisket, picahna, chuck, sirloin and maybe bone marrow as well. Thanks.

I tried something on my pellet smoker today I took the spareribs That I was cooking & coated the spareribs with soy sauce, then wrapped the ribs in smoked lard, the soy sauce added a layer of saltiness to the lard & made it taste very buttery & it made the lard much more flavorful I think this was partly because soy sauce is naturally high in monosodium-glutamate which is a recognized flavor enhancer, & I am looking forward to trying this again.

I'd try it; I happen to have some Ghee, but I wonder if the clarification of the butter makes a lot of difference. Regular butter is certainly cheaper than Ghee, so I'm curious about how brisket with butter vs ghee would taste.

I've tried putting in my fat trimmings from my brisket into a cast iron skillet and putting it in with the brisket when cooking. I've only done it once, but the brisket came out juicer than I've gotten before, and I didn't have to buy tallow to use. The next brisket I do I'm going to try and throw in a couple garlic cloves into the cast iron pan for the last hour before I wrap, so I get a little garlic flavor in the rendered fat that I pour on the brisket before wrapping.

This. I do similar because a bridget is so fatty already and tallow is literally rendered fat.... we trim so much fat off then youtubers add fat back in rendered form to a already indulgent cut of meat. Keep your trimmings, stack em in your wrap if you have a dry cooker and alls good

That oil is suicide dude.Look up just how bad it is in any amount. You take a God given food like beef and put poison on it. Tallow and butter is good but any processed polyunsaturated oil has been proven in studies to cause everything from heart attacks to cancers as well as making you fat. How long will it take to get fat or give you cancer? I don't want to find out personally but hey,do you feel lucky? Well do you? Loved Dirty Harry,lol. I seen the studies that only came out after 50+ years of being suppressed. 62% greater chance of heart attack for humans within 10 years whereas saturated fats like lard and tallow and butter had no increase in risk.

I add a pound of butter to my fat trimmings when smoking into tallow with about a cup of beef broth and pull when all the water is evaporated. Sometimes add smashed garlic and rosemary.

Makes perfect sense. Ghee has a lower melting point so its mouth feel is going to be lighter and it's more flavor forward. I would say that good ghee isn't always an easy thing to source commercially as it isn't real stable and can take on off flavors pretty quickly. It is however very easy to make--just don't use salted butter and look for low water content/higher fat European types.

If you have vegetable oil in your cupboard, you should either toss it or use it to lubricate/season your smoker. Don’t let it go near your brisket.

Why wrap a brisket in beef tallow when the brisket is creating the tallow when it is cooking ? I'm just trying to learn I love smoking with mesquite and I think a malware fat would help balance out the mesquite flavor a touch could make that smoke flavor a little mellower providing you can get enough of that smoked flavor on your meat. I've got to get an offset smoker before I smoke another piece of meat

What a fantastic idea! Ghee is delicious. On a side note, I always wondered why more people don't use bacon grease, it's liquid gold!

I've been wondering about wrapping with bacon grease also, I'm surprised that it hasn't made it into the mainstream videos yet or none that I've seen. Maybe because it's more difficult to aquire.

Correct me if I'm wrong. But isn't Ghee clarified butter? If so I have a better solution. Make steak brisket, cook the Brisket the same however top with butter rosemary and garlic as you would with a steak during the tallow wrap. I have to try it myself.
