I just made this for lunch and it was amazing. I made a few alterations, used carrot instead of cucumber, macadamia nuts instead of peanuts, and lime instead of lemon, but even then, the flavour was outstanding. I couldn't believe I made something that tasted so good! I ate it on top of some left over somen noodles, which matched very well. Thank you for sharing this recipe! Definitely one that will be a repeat!

Transfer to a chopping board then hit with a rolling pin for 2 minutes. Transfer to another bowl then set aside. 4. Chop a handful of scallions then place on the bowl with the chicken pieces. 5. Slice a piece of ginger into strips then combine with the scallions and chicken pieces. Add a tablespoon of light soy sauce, a spoonful of pepper. Mix everything together for 3 minutes. Then set aside to marinate for 5 minutes. 6. Prepare a piece of cucumber then cut into thin strips. Set aside. 7. Chop a handful of coriander then include in the cucumber slices. 8. Prepare a piece of lemon and slice thinly. Add them to the cucumber and coriander. 9. Prepare an onion then slice thinly. Set aside. 10. Slice three red chilis into rings. Set aside. Chop some scallions and include in the red chili slices. 11. Mince 4 cloves of garlic. Set aside together with the scallions and red chili slices. Add some sesame seeds and a spoonful of chili powder. Set aside. 12. Remove the green onions and ginger from the chicken pieces. Transfer the chicken pieces to a steamer. 13. We're eating this for dinner tonight! Kind of. We used carrot instead of onion, and we only used one chicken leg and then three trumpet mushrooms shredded the same way. I also used rau ram instead of cilantro, and we're out of lemons, so I just used more vinegar. It tastes amazing. What a lovely summer dish!

But she presents the video with the recipes in a way that is easy to follow, and in a pleasant clean environment. It is like college textbooks...same content written by different authors. Choosing the textbook(s) that is best understood by the student is most conducive to learning the content. Anyway, she is not paid by me. But I like her collection of recipes, whether "plagiarized" or not. Also, there's not much space/stomach for new ideas or creativity because in the end we have to eat the final product, and cooking is nothing "new." Beginners to cooking have to learn the ways to prepare food, or just copy something simple to do.
