Ingredients:
-1 lbs shrimp with shell and head on
(For fume stock)
-shrimp shells and heads
-2 quarts water
-1 yellow onion
-2 stalks celery
-4 oz butter
-sprig thyme
-tbsp peppercorn
-1 bay leaf
(For soup base)
-1/2 cup yellow onion
-1/4 cup shallow
-1/2 cup celery
-4 oz butter
-4oz evoo
-2 tbsp paprika
-1 tbsp cayenne
-1 tbsp red chili flake
-1/2 tbsp celery seed
-2 tbsp tomato powder or tomato paste
-8 oz ap flour
-2 quarts shrimp stock
(finish bisque)
-2 quarts smooth shrimp soup base
-salt to taste
-pepper to taste
-1 cup cream
-1 bay leaf
(Cooked shrimp)
-4 oz butter
-1/2 cup white wine
-1 tbsp pepper corn
-salt and lemon juice to taste
-shrimp cleaned and peeled
-zest of a lemon
