For all those asking why it's called lobster sauce, that's the way they cooked lobster in the Toishan region in China. The early immigrants from China to America were mostly from that region. When they came over, they substituted the shrimp for the lobster since it's far easier to get shrimp than lobster. The proper name for this dish should be 'Shrimp with lobster style sauce". Chinese is a stylized language, so when just say shrimp with lobster sauce, many if not most will understand that it is just stylized language. The literal translation for this dish in Toishanese is " Shrimp lobster gravy". My heritage is Toishanese and my dad was a chef, so growing up, I used to hang out with a lot of the old time Chinese chefs (they were in their 80's back in the 1970s) and that's the way they explained it to me because I was wondering the same thing.
My family is also old school Toisan restaurant owners and I don’t know how our version mutated into what it is, but ours is mostly the same but we take whole fermented black beans and turn them into a mash and mix it with some seafood broth and oyster sauce and simmer with the mix - it’s almost like a Korean jajangmeon, but much less sauce.
Shrimp in lobster sauce is one of my all time favorites. To this day I thought it was actual LOBSTER sauce. SO happy i learned the history of this delicous dish. SUBSCRIBED!
My mother used to make lobster sauce for us all the time, same recipe as yours, but she added more ground pork, included the egg yoke and added a tablespoon of fermented black beans to give it even more flavour. Very tasty, I know what I’ll be having tomorrow😋😋😋

I've made your recipe with your directions at least 7 times and it comes out great! That is the way I remember it but it was with lobster in China Town NY when I lived there. Excellent and exactly the way it tasted!

This is one of my fav dishes, I am friends with my Chinese restaurant chef, I bring him a lobster tail and request that the whole egg be added to the dish with extra garlic, he make me very happy all the time!!!

Decades ago, our 'Payday' lunch was to go to Philadelphia's HAPPY GARDEN restaurant. Shrimp with Lobster Sauce was one of our favorite dishes! It was made this way!
