Ragusa, Sicily is home to the most delicious Italian snack: Scaccia. Giovanna, a grandma and local Ragusan, opened up her home to us on our recent Sicily trip so we could learn how to make this treat almost as good as an Italian Grandma.
We were welcomed into the home of Chiara and Vincenzo, whom along with their daughter Emilia and made us feel like we were at home. We prepared scacce alongside Giovanna, learning her technique that was passed down from her own mother. This wasn't a written recipe but a recipe of her family. We filled these calzone style snacks with cheese, vegetables and meats. While they baked, we talked, laughed and drank wine as the sunset over Ragusa.
We never would have had this memorable night--sharing stories and learning from each other through broken english, some Italian words and a helpful translator, without the experts at Absolute Sicilia. This Sicilian based tour company allowed us to form real relationships with locals and experience the warmth of Sicilians. That is the truest form of luxury.
Grazie to Chiara, Vincenzo, Emilia and of course, Giovanna. It was our favorite night in Sicily and we send you lots of love from the USA. I wish I could eat these scacce right now!
