Mr Lim..I would like to ask on how to make a perfect smooth egg white/ meringue by using hand mixer? I mean the speed... cause,mine always end up not smooth n overmixed.its because I used to work in a bakery and we were using those huge mixer n everytime we mix we straight away using speed 3.the result was excellent cause I do aware the big whisk can cover the wall in the bowl.so when I used hand mixer I did the same but the result quite disappointed 😔

ariefiani arifin, you can use high speed to whip your egg white, not a problem. Use 30 gr. sugar for each egg white and you will get a nice smooth and glossy meringue. Less sugar in egg whites, you will get lumpy meringue. No sugar in egg white, you will get lumpy meringue and in few minutes it becomes watery. Nevertheless, use room temperature fresh eggs and make sure your bowl and whisk are free from any grease. If you follow me for a while now, you should know I already uploaded video about egg whites on my channel.

Perfect as always ;-) Please make creme brulee, i don't know why but my creme brulee tastes like cream caramel, i want it more creamy inside like pudding ? maybe i need to reduce egg yoks.

hi chef, thx for your receipe. been follow your receipe for chiffon cake , coconut tartlet , no bake lime cheese cake with mirror glaze. all is so beautiful. today I'm going to try out tiramisu. I'm using 9inc loose tin may I know how many ingredients I need to add on? as I saw your reply if 8inc have to double the ingredient then how about 9 inch? thanks for ur help.

I notice this recipe has raw eggs in the end product. is it better to cook the yolk sugar mix over boiling water or do you believe the sugar concentration is sufficiently high to kill any bacteria?

Traditionally this is how tiramisu are made till now. You can choose not to eat them or use pasteurized egg, instead of being so paranoid about it. Respect how the recipe was invented and how tiramisu even exist

Using right among of egg whites. Always whip the egg white with sugar. Look at the video for batter consistensy.
