▷Ingredients
Sponge cake
3 egg yolks
30 g thick sesame oil
20 g water
40 g light flour
5 g cocoa powder
3 egg whites
60g sugar
▷How to make
1. Mix egg yolks with sesame oil and water.
2. Sift in flour and cocoa powder.
3. Beat the egg whites and add the sugar in 3 parts to make a meringue. 4.
4. Add 1/3 of the meringue mixture to the egg yolks and mix thoroughly, then add the remaining meringue mixture.
5. Pour the batter into a baking pan that can hold two 15 cm dia. sponge cakes, and bake in a preheated oven at 180°C for 13 to 15 minutes.
6. Remove from heat and cut into two 15 cm dia. slices.
■Coffee Shop
50 g hot water
2 g instant coffee
25 g sugar
■Tiramisu
200 g mascarpone cheese
20 g sugar
5 g powdered gelatin
30 g water
200ml fresh cream
20 g sugar
▷How to make
1. Add instant coffee and sugar to hot water and stir until dissolved.
2. Add sugar to mascarpone cheese and mix.
3. Sprinkle the gelatin powder over the water to soften, and then dissolve it by heating it in a hot water bath. 4.
Add to the mascarpone mixture and mix. 5.
5. Add the sugar to the cream and beat loosely while chilling in ice water. Add to the Mascarpone mixture and mix. 6.
6. Line a 15 cm dia. mold with a cookie sheet, line with sponge cake and pour coffee syrup generously. Pour half of the tiramisu mixture into the mold, cover with sponge cake, and drizzle with coffee syrup. Pour in the remaining tiramisu and refrigerate for at least 5 hours. 7.
7. Remove from the mold and sprinkle generously with cocoa powder.
