A year is almost gone and it's time to plan for our reunion dinner again. This Fortune Abalone Pot is a simplified version of your typical Pun Choi / Pen Cai 盆菜. If you still prefer Pun Choi but you want some idea on how to prepare the gravy, you can watch this video to get some ideas.
See the ingredient list below for your easy reference.
We would like to give special thanks to La Gourmet for letting us try out their high quality non-stick pan and claypot in the video respectively. Their non-stick pan is sold under Shogun by La Gourmet brand. If you like to buy them, you can go to any of the major departmental stores in Singapore such as Isetan, Robinsons, Takashimaya, BHG, OG, Metro or Tangs. Ingredients:
Serves 8 - 10 pax
(A) Marinated chicken - Marinate, pan-fry then set aside
150g of boneless chicken thigh meat
0.5 teaspoon of cornflour
0.5 teaspoon of sesame oil
1 teaspoon of light soy sauce
A few dashes of white pepper
(B) Marinated Chinese mushrooms
5 pcs of dried Chinese mushrooms - rehydrated
1 teaspoon of sesame oil
1 teaspoon of light soy sauce
0.5 teaspoon of sugar
(C) Saute sea cucumber to remove as much moisture as possible
Some cooking oil
3 slices of ginger
120 of fresh sea cucumber
(D) Prawns - pan-fry and set aside
6 pieces of prawns - remove shells and veins
(E) Strain abalone & sea asparagus from can
1 can of Fortune baby abalone (keep brine for later use in this dish)
1 can of Fortune sea asparagus (keep brine for later use in this dish)
(E) Putting the dish together
1 thumb size ginger - sliced
3 cloves of chopped garlic
Marinated mushrooms (B)
1L of water
Sea asparagus brine
Abalone brine
2 tablespoons of Fortune abalone sauce
0.5 tablespoon of premium dark soy sauce
Half a carrot - sliced thinly
80g of abalone mushrooms
Pan-fried sea-cucumber
240g of egg tofu (air-fried or deep-fried)
Some cornstarch solution
Other ingredients
----
1 head of broccolli
250g of cabbage
Line all ingredients in a claypot using cabbage as the base first. Then add gravy to claypot and bring the whole pot to a boil. Once done, drizze over 1 teaspoon of sesame oil before serving.

Can you do beef shank soup? I had it before, but cannot reproduce it. It is very spice and extremely good. He recipes I see have a lot if spices and other ingredients, but I cannot seem to get them to balance. At all. There must be a trick to getting the spices balanced.

What a wonderful celebratory dish, but the Abalone should be fresh for New Years. Canned Abalone is definitely okay for a regular dinner, and really good canned seafood is even passable for non-celebratory stir-fry dishes. The best canned seafoods are Geisha brand cleaned cooked Clams (no bellies or guts), jarred fresh raw Pacific Oysters from the refrigerator section, good Japanese "Kamaboko" Fish Cake or Lox, or Gravlax, or good Imitation Crab also all from the refrigerator section, good Vietnamese Fish Sauce, good Portuguese or Spanish Sardines cooked in spicy Tomato Sauce or yellow Mustard, good canned or jarred cured Anchovies from Sicily, jarred pickled or creamed Herring of various types including "Maatjes," jarred Italian Tuna cooked in Olive Oil, canned Spanish baby Eels, jarred Caviar or Salmon Roe, and canned Smoked Oysters or Smoked Clams or Smoked Mussels. The Worst canned seafoods are canned cooked baby Shrimp (it's 'mealie), canned cooked Swedish Fisk-Bullar (fish balls), canned raw Sea Urchin (it's gross and it smells bad), jarred dried Sicilian Bottarga, canned cooked Scallops, canned cooked Mussels (not smoked), jarred rehydrated Seaweed, canned cooked Crab, canned cooked Cod-Cakes with Potato, canned cooked Salmon, canned cooked Squid in its own Ink, canned cooked Octopus, canned cooked Abalone, and canned cooked Lobster Meat. All of these are cooked inside the sealed can, which gives them a strange texture and flavor.

Hihi. Unfortunately I don’t think the brand is available in the US but you should be able to find something similar there. If you can’t find them, you can use something similar like razor clams. Hope this helps. Happy cooking!

A word of caution about using the brine or any liquid from canned food...it is full of preservatives so best to discard than consume but for abalones, I usually make an exception since it's so sweet and such a shame to throw.

Hi Xiaozhuzhu. Yes you can but we highly recommend abalone sauce because it contains extract of dried scallops which will make this dish really yummy. Fortune abalone is sold in supermarkets at S$3.80 per bottle. You can use it to cook vegetables or other seafood dishes as well. Hope this helps.

Thank you for your recipes. They are really good. But I have a constructive comment (don't mean to insult) - might be good you look into the translation of your instructions into English. Take a look at the translation in this recipe - it is totally not understandable. Doesn't reflect well on your support stuff. Just want to help.

My chinese surname is Cai & this dish' name really offends me. Pen is stupid/ idiot. Especially bc they actually use a big pot / gūo to serve this dish , not a pen/ basin... Of course its really a special & luxury dish , made with many expensive seafood... But the name! It makes me remember while i was at China for 2 years , ppl loved to mock ppl everywhere... Even until now! Very rude n uncultured ppl😕
