OPEN for ingredients! Oyster Omelette, or Fried Oyster Eggs or Orh Luak or Orh Jian is a Singapore Hawker classic. This is such a unique dish - a chewy gooey starch stir fried with eggs and tossed with oysters. To be honest, I love this mainly for the chewy bits. This is also always served with a side of a spicy sour sambal, which goes so well with the briny oysters and I'll show you that here too. A super quick and easy recipe for Orh Luak, so let's gooo!
The hawker version often has pork lard, this has no pork lard, but still delicious. Feel free to load up on oil if you want the greasiness of the lard.
Don't like oysters? Replace with shrimps or prawns - in fact it's what I always do. Prawns take longer to cook than oysters.

Ingredients:
- Batter:
- 3 tbsps Tapioca Flour
- 1 tbsp Rice Flour
- 1/2 cup Water
- Pinch of Salt
- 8-10 Oysters, option to season with:
- 1 tsp Fish Sauce
- 1/2 tsp White Pepper
- 2-3 Eggs:
- 1 tsp Fish Sauce
- 1/2 tsp Ground White Pepper
- 1 clove Garlic
- A handful of Spring Onions
- A handful of Cilantro
Easy Sambal:
- 100ml Dried Chilli Paste
- 2-3 Shallots
- 2-3 Garlic
- 2 tbsps Belachan or Dried Shrimp Paste
- 2 tbsps Dried Shrimps, soaked in warm water
- 1/2 tsp Salt
- 1 tbsp Sugar
- 1 tbsp White Vinegar*
*Ratio for Sambal:Vinegar is 1:1. So add 1 tbsp vinegar to 1 tbsp of sambal.
