I still remember the first time I ate green tomatoes. It was back in the late 50's, my grandmother fried some green tomatoes for my grandfather's breakfast, along with fatback bacon, eggs and biscuits, He sliced a biscuit in half, buttered both halves, placed a slice of green tomato and bacon. He placed the top back on and passed it to me. Wow, it was so delicious. My grandmother used an egg, buttermilk and seasoned cornmeal to coat the tomato slices. She kept a bacon grease pot near the stove, and cooked all the food in the cast iron skillet, that was pasted down to her from her mother, who had passed it down from her mother..that I have and use..My dad was a sous chef (although he was never called that because he was Black) in several high-end restaurants in the late 50's early 60's here in Dayton OH. He would bring home beef meat scraps (also shrimp, frog legs and lobster) and using his chef knife would mince up the scraps. He would cook Salisbury steak with gravy over rice and creamed spinach.
