Slicing Up A Brisket-Style Tri-Tip!

So after going to my local butchers and seeing what inflation has done to the cost of brisket I decided to grab a tri-tip instead and just cook it up "brisket-style." Honestly it's a pretty good alternative, at least in my humble opinion.

I usually make my own from scratch. But if I do not have time I use Big Bob Gibson's Championship Red.

So you're saying in stead of cutting it in half then slicing it, I can leave it whole and slice longer thinner portions? (Thinking about sub sandwiches)
