Thank you Noreen! I learned how to make a homemade beef and barley soup from your recipe that I can enjoy AND that reminds me of the Campbell's Vegetable Beef soup I loved in my childhood. Yum! I did try your recipe as shown in the video, but I decided I didn't like the diced tomatoes, onions, salary, or mushrooms, and I would prefer peas and potatoes added instead. With those adjustments, I've found a keeper of a great recipe. Thanks for bringing beautiful barley back into my diet.
I would have tossed all this into my pressure cooker, (I guess these days folks use them Instapot things) 35-45 minutes we would be eating yummo soup. Slow cooker works too I guess. It just takes 6-8 hours.
It looks amazing. I'm not a fan of mushrooms, is there anything we can/should replace the mushrooms with? Leaving them out is fine but I'm always concerned it's an intended base
This morning I saw the Beef and Barley soup recipe. since I live in North Carolina like you. I agree. cold! I jumped up from my coffee, got ingredients together and put the soup on to cook. We had it for dinner tonight with crusty Italian bread and it was so delicious!!! Thank you!!!!
Tasty - you're right, the barley is an ideal cereal for this soup blend! A low sodium salt, with more potassium chloride than sodium chloride (Lo-Salt) makes a healthy alternative. to regular (kosher) salt

I just had a cambells chunky canned soup( hearty beef barley) for lunch at work and it was delicious. But while eating I decided to look at this video. Boy oh boy do I want a bowl of that.!
hi.. im going to make your soup.. im reading on the barley pack that i need to soak them over night.. do i have the wrong kind of barley or will i just ignore what it says on the package...
+vo1um1 You don't have to cook the barley first. It cooks in the soup. You can ignore the directions for cooking. It should take about an hour to cook pearled barley. If you have non pearled barley, then you may indeed have to soak it.
Hey everyone, I made this last night and it was incredible! So much flavor! The only thing I did differently was brown the meat, but who knows how much difference it made. Definitely recommend. So easy, too!
When you say "1 1/2 cups pearl barley (Not quick Barley)" - can I use Quick Barley if I make it in a pot on the stove, instead of a slow cooker? or does quick barley not taste right?
+TheSUPERHAPPY1 I do not recommend quick barley because it is highly processed and devoid of nutrition. It has been cooked, drained and dried before putting it in the box. It is quick because it has been pre-cooked. I still recommend you use regular pearl barley even if you do make this on top of the stove.
