As a single dad, the slow cooker was my general go to. I'd prep the meal the night before, get up early, turn it on high and my oldest would turn it to low before she went to school. I'd get home and fix the sides. Dinner table rule- everyone sits at the table and no cell phones.
This was the best roast I ever made. I ALWAYS dry everything out. I served 8 people at Christmas and there wasn't a bite left. My kids FOUGHT over the last 1/2 cup of liquid to dip their rolls in. I wish I had a printout of it. I REALLY hope I don't lose this video. Totally AMAZING‼️
I just had to come back and tell you that I’ve been making roast for yearssss, but I’ve been wanting to try something new. I came across your video on Friday and on Saturday I followed your recipe to a T and honestly, I was skeptical at first, but it was literally the BEST roast I ever made. I will never go back to my old recipe lol… I bought another roast while I was at the grocery store on Sunday just because I’m going to make another one probably next weekend lol
This was the best pot roast ever. I used new potatoes and whole carrots. The only change i made was roasting the vegetable in oven at 400 degrees for a half hour. Cooked on slow in crockpot. I had leftovers and heated them in a pan. It reducer the juice to a wonderful gravy. Thank you so much for this recipe.
OMG! In all truth I was really hesitant in making this recipe. The ingredients just didn't seem right, but reading all the reviews made me do it! I AM SO GLAD I made this tonight! It was absolutely the best pot roast I have ever made. I've made dozens...but none were keepers. I personally don't like red wine in mine, so I added extra chicken stock. It was perfect! A forever keeper recipe! Thank you Claudia! I made a 2 pounder and kept the same ingredients as is. Had a bit left over on the spice rub, but kept it for next time. My 2 lbs fed 4 people with sides. I'll make the 6 pounds and keep servings in the freezer for next time! I'm jumping up and down all over my kitchen! Yay! Woohooo!
I just wanted to comment to thank you sooo much for this recipe. This is the first meal I've made in my slow cooker that comes out perfect every single time. I'm making this same dish again tomorrow for the 4th time. I add potatoes instead of the celery and skip the wine, it tastes delicious! It's one of the few dishes my husband actually requests frequently.
One time, I cooked a chuck pot roast in my slow cooker for 12 hours. The roast was so tender that it fell apart into tiny slivers of meat. After that, I placed the rest of the ingredients into the slow cooker, and let all of it cook an additional 5 hours. Made rice and corn bread. Had a delicious meal that day. Since then, I have repeated this same cooking style with ease. Good eating.

Great recipe, my family enjoyed. Crockpots tend to impair the flavour of spices so I always use more than I usually would. Another tip, once everything is cooked, scoop the meat and all veggies out with tongs and a slotted spoon and set aside. You'll be left with a crockpot of nothing but liquids and juices, grab your favourite store bought packet of gravy mix and crank the crock to high, whisk it in to turn the juices to a thick and attractive gravy. Slice and re-add your meat and even veggies if you wish. Turn the crock back to low, cover and simmer for a final 10 minutes. Serve, and savour!
Claudia, I will thank you for this wonderful recipe. I made a Pot Roast past week and it did not have very much flavor. After watching your video, I think I fell short on seasonings. I seared the Chuck Roast and added Carrots, Onion and Celery but did not use red wine or enough herbs. Thanks to you, I feel my next one will be better.

This is my second time making this & I love it! And so does my entire family! I used broth & a splash of apple cider vinegar in place of the red wine, & soy sauce in place of the Worcestershire. Doubled the carrots & celery & threw in a bag of mini potatoes! SO DELICIOUS!

I made this for Thanksgiving as written, except with beef broth, merlot, and extra carrots. Was done at 6 hours, and was absolutely delicious. Thank you for a wonderful recipe.
@@JohnGrove310...when i used red wine, tomato paste & w sauce i think the beef broth made it a little too rich but i made some cornbread from scratch for the sauce and it was perfect...
This is the 3rd time I’m making this in a month b/c it’s so good. I cook it for 6 hours b/c we are hungry by 5pm . Delicious 😋 This was our main Thanksgiving meal and leftovers for two days. 🎄
Another little trick to get rid of oil on the top.....very LIGHTLY stick the edge of a paper towel in just the oil, don't get down to the gravy...and the oil travels up the paper towel and pretty much absorbs oil only....keep rotating the paper towel and wallah.

Three days ago I discovered this video. Yesterday I bought all of the ingredients and this morning starting at 7:30am, I proceeded to prepare this amazing dinner. I only made a few changes; I added mushrooms and small gold potatoes plus when prepping the sauce-gravy, I added a TBS of Better Then Bouillon. It turned out delicious. We served it with Parker House Yeast Rolls!

This is such a great recipe. You can prep by measuring out the seasonings and essentials, then precut the veggies. With many ingredients it helps for a smooth process.
I make this recipe every two weeks it is so good. But sometimes as a busy single dad I don’t have the time so I follow all your steps but for the sauce I get Lipton onion soup mix and it turns out pretty good

You might try using a stock sachet instead of just putting the herbs straight in. Then you can just pull the sachet out at the end and not have to worry if you missed something. Common in soups and stews.
Hi, Claudia! I’ve just assembled this recipe for the second time. The flavors are just right, and when I made it a couple of weeks ago not a speck was left. I didn’t feel like cracking open a bottle of wine this morning, so I’m trying it with some homemade chicken stock. Great recipe. I've never tried browning the meat with the green herbs. Also, to make it easier at the end, tie the herbs up with string, it's called bouquet garni, it's easier than picking them out in pieces.
