I made these creamy Lima Beans And Ham Hocks using my Slow Cooker.
The first and most important step is to cook the Ham Hocks in the Crock Pot on high for at least 2 hours. This ensures that your cooking liquid is adequately seasoned. After two hours in the Crock Pot, remove the Ham Hocks and remove the meat from the bone after they have had a chance to cool down. After removing the Ham Hocks add the Lima Beans, Onions, Celery, Ham Hocks and Seasoning and cook until Lima Beans are cooked to your desired softness.
These Lima Beans are so good that I can make a meal out of them. If you don't have a Crock Pot, or Slow Cooker of any kind, these Lima Beans And Ham Hocks can be made on your stove in a large pot.
If you are vegetarian or vegan, obviously don't add the Ham Hocks, but use a vegetable broth in place of water. I think that adding Portobello mushrooms would be a nice addition also.
Lima Beans and Ham Hocks Ingredients:
16 Oz, Dried Large Lima Beans
4 Ham Hocks
1 Cup Chopped Onions
1 Cup Thinly Sliced Onions
Mr Pete's Cajun Seasoning (or whatever seasoning you like) to taste.
3 Quarts Water (Or more if needed)

yes, yes, yes.... but a new presentation............ you ladle lima&ham hocks into a mashed potato well........ (and many of us put a dollop of ketchup on top..... don't bash it til you try it).................................................. this a a polish/german and definitely not southern US food...... my great-g'ma who was born in Minnesota in 1898 and then lived her entire life in Montana........ and never had any southern roots at all...... made this and passed it down to her children/grandchildren.............. it's a topic of family conversation because some love it and some hate it. My family are on the love-it side............. I even have kids who ask for it for birthday meals!!!!! HAHAHAHA.

You gotta sort your beans! Don't wanna break a tooth on a rock.
@sleeksalmon
@sleeksalmon 5 лет назад
That looks wonderful, Buttttttt can I say.... You are working to hard for it...... dont soak the beans and you can add everything at once..... Just start that in the morning, or overnight..... Just saying... I call this depression style cooking..... My grandma would say that every once in a while she would get in trouble for letting the beans "run dry" while her mother was working....... that was the families dinner at that time, so if you screwed it up it was a big thing.... they didnt eat!...... I also cook like this and understand it... No, no one is going to starve, if I mess up, but Im not .... Low and slow, on the back burner...........Everything in the pot all at once!

Yall do yourselves a favor and 86 the hocks and just go ahead and use neckbones... less fat, a decent amount of meat and if they are smoked they add more flavor. If they are fresh they they tend to cook a bit more tender.
