I have some thick tri tip steaks and will try this with them. I don’t think they will take 8 hours so I will periodically check the temperature.

I generally use a 2-3 pound chuck pot roast!

Cook it still work if I cook it on high for less hours?

I've had more luck going low and slow with roast. You can try high temp for less time, but if it's not melting apart/tough, it's not done just yet.
