@Lindas Pantry what is a proofing oven? I Google using an oven, but there r sooo many ways to use an oven. What temp did u bake the bread at. I feel I missed a lot of steps, so I replayed both videos, and still feel like I missed steps. Must we use a special flour, or is all purpose ok to use? How to store the sourdough mixture? How long to store it? U kept saying u were going to cover it with a damp tee towel, but never did. How long does the mixture last? Do u feed it EVERY 2 days? When in the bowl, u say to mix it every 20 minutes - how often do u mix it every 20 minutes? Then, all of a sudden it's in the bread pan and U make the cuts on top. U say u bake it for 20 minutes then take the cover off - so do u continue to bake it further? For how long? This could just b me, but I'm still very confused on how to do this - start to finish. TY for doing this. I do really need to learn to make bread.

Nice loaf, but this is a standard fermentation for sourdough. When it is stretched over 4 days then it is slow fermentation. You are definitely ready to try it and the increase in flavor will astound you.

I make sourdough sandwich bread twice a week.. I use the scrapings method, its much less work. I add two tablespoons of melted butter which helps soften the crust a bit. I degas after the first rise with stretch and folds, then fold it and put it in a greased large wilton bread pan for the second fridge rise. To adjust for the steam and ensure oven spring, I put a foil pan of water in the oven while it is heating up and baking. 375 for about 40 minutes or until it reaches a temp of 190.

Linda, my mom always turned the bread on its side to cut a slice. Maybe that would make it easier for you. Beautiful loaf by the way.

Linda please tell me what temp you baked bread at. I heard you say that you turned it down to 400, but what temp did you start at? Also when I made mine in my cast iron oven the bottom was hard to cut through and I notice that it was to tough to bite through. Also my starter does not have much flavor. What can I do?

You made a fine looking loaf of bread Linda, but you could really use a new bread knife, believe it or not my favorite is a Rada one, cuts like butter, and I see you have a Rada in your links.

You might look at “farmhouse on boone”. She uses einkorn flour and makes lots of sourdough recipes.

I’m pretty sure the smoke that came out of that pot was off gassing from the nonstick coating being degraded by high heat from the oven. There are lots of alternatives to Dutch ovens for baking crusty bread that don’t require overbearing your pans! A baking sheet with an overturned metal bowl works. I’ve even seen people use overturned aluminum foil baking pans. Of course you can a steam source in the oven like a pan of lava rocks. There’s a good channel “the bread code” about bread baking, he shows several alternatives

This was so fun watching you make your sourdough bread. What a great job you did. I'm looking forward to seeing more and watching your enjoyment! What a satisfying and giving hobby and sooo much can be learned! It just doesn't get any better than making sourdough bread! My first adventure into it was the (No Knead Bread) by Jim Lahey. I was hooked from then on. I have been an avid artisan bread baker for years and love it. I've collected two shelfs of books on bread and pastry making and now being 77. I know neither my vegan daughter or granddaughter will have no interest in them. Breaks my heart to think of what the new generation is missing out on. I did teach them to make pizza though :)). My sourdough 'wild yeast' started on my counter about 10+ years ago and I've kept it going ever since. I also bake in my wood fired oven. I do find my small kitchen scale indispensable. I measure everything to keep everything on target. I keep my starter at 100% hydration and can change it anytime needed. I also find that one of those cheap hotel plastic shower caps comes in very handy for covering over my dough in the baton for overnight fermentation. I do use rice flour in the baton. It's like roller skates on the sticky dough. It is best to slash your bread just before placing it into the oven. That way you will get a lovely mark. Many just also place their bread with the folder (seam) side down and turn it out so it faces up and then you get a natural split in your bread.
