Buttermilk Biscuits
2 cups all-purpose flour spooned & leveled
1 tablespoon baking powder
¼ teaspoon baking soda
2 teaspoons sugar
1 teaspoon salt
6 tablespoons cold unsalted butter cubed
¾ cup cold buttermilk plus more for the tops of the biscuits
In a large mixing bowl, whisk together the flour, baking powder, baking soda, sugar, and salt until well combined. Add the cubed cold butter and cut it into the dry ingredients until you have small pea sized pieces of butter. Pour the cold buttermilk into the mixture and gently mix until the dough starts to come together.
Place the dough onto a lightly floured surface and pat it down into a 1/2-inch. Using a cutter, cut out the biscuits and transfer them on a baking sheet with parchment paper.
Bake on 450
for 15 to 17 minutes or until lightly golden brown.
Eggplant Pasta
4 cups eggplant
1 14oz can diced tomatos
1 cup diced onion
2 TBS unsalted butter
3 cloves garlic
1 TBS tomato paste
1 TBS dried italian seasoning
1.5 tsp salt
1 tsp red pepper flakes
2 cups penne pasta
1/2 cup bread crumbs
1.5 cups mozzarella balls
Stir in all ingredients except bread crumbs and 1 TBS of butter into instant pot. Pressure cook on high for 7 minutes and pressure release after an additional 10 minutes.
Place 1 TBS of butter and breadcrumbs in a small pot and melt down together. Top the dish with breadcrumbs and mozzarella balls and place into broiler for 3 minutes.
