Having smash burgers tonight, too. I do my own brioche buns. Use the bread maker to knead. So easy. Can’t wait. This has made me hungry for them Tom! :-)
Great content Tom. I regularly do smash burgers indoors, never thought to use the IR gun to temp the pan. Will be doing that in future for sure. One tip I'd recommend is toasting the buns. Such a simple thing can elevate even cheap supermarket buns.

Speak to Steel smoking directly and ask about a 15" plancha rather than a full size. Hopefully that will cut the cost down. Trouble is Steel prices are so high ATM
