第一次是 :- 50 g麺粉 + 50 ml 水 = 100 g老面, 对吗? 第二次是 :- 100 g 老面+300 g 麺粉 + 150 ml 水 = ? 为什么是 450g 的酵面而非 550 克的酵面 ? 接着第三次可以开始制做皮是: 300 克麺粉 + 450酵面, 请问是这样吗 ?

Hi An, the author didn't seemed to respond to the watchers. Thought I should ask you because you made it. The ammonia powder smell is so strong after the buns are steamed, and I only used 1tsp instead of 1.5 tsp like she instructed. Also mine buns came out yellow..... any thoughts or suggestions? Thanks

Add some vinegar to the water you use to boil the buns in. It will make it more white. The ammonia makes it smile. Without it it wont smile. Use less of it. But the smell will go away if you let the buns cool off and then resteam it.

@@tramimn3200 hi. E viết tiếng Việt cho chị dễ hiểu nhé. Hôm nay mới thấy comt của chị. Sorry. Hy vọng chị còn cần. Bí quyết bánh trắng và không bị khai là chổ lúc trộn cái bột chua đấy chị. Phải cho bột khai đúng trình tự, bột khai hòa vào bột chua sủi bọt như trên video mới là đúng. Và chị nên cân chứ đo bằng tsp có khi lố tay là hỏg cả dặm, 450gr bột chua dùng 5-6gr bột khai là đủ cân bằng.cái nước tro tàu họ cho vào dùng đúng 1 giọt, nhiều hơn cũng sẽ làm bánh vàng. Khâu cán bột bắt bánh cũng quan trọng, bánh này cán bột không quá dầy, bánh quá to bột khai cũng khôg phản ứng đủ nhiệt để thoát ra. Cách khắc phục là chị cứ cho bánh đông đá, sau đó đem ra hấp lại, rồi đông đá, hấp lại, tầm 2 3 lần là bánh sẽ trắng bông trở lại( này là trường hợp bánh hơi vàng chứ vàng nâu quá thì chỉ có bỏ). E thì khog cần dùng giấm vào nước hấp mà bánh vẫn trắng bông. Và e cũng chỉ dùng bột apf chưa khôg mua được bột pauflour như video mà bánh vẫn trắng ạ. Nở múi hoa đẹp thì nhờ db-baking powder và nhiệt mạnh mới thành công.

I have the same problem, yellow buns. Upon my research the alkaline or lye water is what makes it brown. Maybe her "alkalin water" is not the same as the lye water that I used. I might try again and not using the lye water or I will just have to look for a different recipe
