I am a Teochew and I can tell you one or two things of our peach cake. 1] it is called ang to guê 紅桃粿 or just to guê 桃粿 and in Malaysia and Singapore it is called bung guê 飯粿 2] to make it pink, we use ang kêg bhi 紅麴米 a fermented red glutinous rice - we grind the rice into a powdery form and mix a little of this into the rice flour before pouring in the boiling hot water. 3] we do not add tapioca flour with the rice flour - I think this is a Malaysian / Singaporean thing for I have seen some Malaysian people in RU-vid add tapioca flour into all sorts of things Nevertheless, thank you for promoting Teochew culture.
